  • 1 ½ pounds mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme leaves
  • 4 tablespoons olive oil

  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Fresh thyme sprigs, for garnish (optional)


  1. Preheat your oven to 400°F (200°C). Place the sliced mushrooms, minced garlic, and fresh thyme leaves on a large baking sheet.
  2. Drizzle the mushrooms with olive oil, season with salt and pepper, and toss everything together until the mushrooms are evenly coated.
  3. Roast the mushroom mixture in the preheated oven for about 25-30 minutes, or until the mushrooms are tender and lightly browned, stirring once or twice during cooking.
  4. Transfer the roasted mushrooms, garlic, and thyme to a large pot. Add the chicken or vegetable broth and bring to a simmer over medium heat.

  6. Using an immersion blender or a regular blender, blend the soup in batches until smooth and creamy. If using a regular blender, be sure to blend in batches and vent the blender lid to prevent steam build-up.
  7. Return the blended soup to the pot and place it back on low heat. Stir in the heavy cream and gently warm the soup until heated through.
  8. Taste and adjust the seasoning with salt and pepper if needed.
